Creamy Cucumber Raita
This is a great accompaniment to the Bombay Chicken!
- Yields: 4 to 6 servings
- Preparation: 20 minutes
Ingredients
- 1 cucumber, shredded
- 1 tsp (5mL) salt
- 1/3 cup (75mL) mint leaves, finely chopped
- 1 cup (250mL) GAY LEA - Original Sour Cream
- 1 green onion, finely chopped
- 1 tsp (5mL) lemon zest
- salt, to taste
- black pepper, to taste
Instructions
- In large bowl, toss cucumber with salt and let rest for 15 minutes. Drain and rinse with cold water. Pat cucumber dry on a paper towel.
- Return cucumber to bowl and add remaining ingredients. Season with salt and pepper to taste. Serve immediately or
refrigerate until needed.
